What to Do With All That Excess Food

It’s always better to cook too much than not enough over the holidays, but that means you could have a lot of excess food to deal with. The good news is that leftover food like turkey, roast vegetables, cranberries, and potatoes are very easy to throw into new dishes, so you’re not eating the same plate every day.

Sandwiches

There’s nothing easier than throwing together a sandwich. Just grab two slices of bread, layer one with cranberry sauce, and pile on the turkey and stuffing. Add a layer of warm gravy on top to complete the delicious combo.

Salads

Another way to enjoy leftover turkey, cranberries, chopped-up green beans, and even ham is in a salad. Toss in some nuts and a hardboiled egg, and top it off with mayo for a quick and easy lunch. You can even put it between bread for another type of sandwich.

Turkey Soup

There’s nothing more comforting than a warm and hearty turkey soup on a chilly winter day. Use the leftover bones to make the broth, simmer carrots, onion, celery, and noodles until cooked, and then throw in any of the remaining shredded meat.

Pot Pie

You can include many of your leftover ingredients into a pot pie, including turkey, ham, and vegetables. Top it off with a creamy sauce, layer on a sheet of puff pastry, and bake until golden brown.

Egg Bites

Transform your leftovers into a filling breakfast by blending together eggs, leftover turkey or ham, chopped vegetables, and stuffing, and then baking the mixture in a muffin tin. Bake until golden brown and crispy.

Turkey Burritos

Take your holiday dinner as an on-the-go lunch in a portable burrito. Throw all of the fixings into a tortilla, including turkey, stuffing, gravy, mashed potatoes, and cranberries, then wrap it and pan-sear it to a light crisp.

Power Grain Bowls

Similar to a burrito bowl, a grain bowl is a great way to get through your turkey and vegetable leftovers. Roasted sweet potatoes and Brussels sprouts are a particularly good choice. You can use just about any grain, but quinoa or brown rice are the best choices for their nutrients and energy boost.

Mashed Potato Fritters

If you ended up with way too much mashed potato, eating it in the same form can get boring after a few days. Instead, mix it with flour and eggs and fry it up into delicious breakfast fritters. Have some leftover gravy? Ladle it overtop before you start eating.

Leftover Pizza

One of the easiest ways to finish leftovers is to make a pizza. The trick to a leftover pizza is to make and bake the dough until slightly puffy. Then, top it with a layer of mashed potatoes, chunks of turkey, and stuffing before baking it again until the crust is golden brown.
