Recipes to Celebrate the Longest Day

The summer solstice is almost here and there’s no better way to celebrate than with some delicious bites. Whether you are hosting or heading to a potluck, try out these recipes.

There are a lot of ways to mark the longest day of the year, including a picnic, barbeque, fire pit, or just a quiet day at home with your loved ones. To make any occasion a little more special, you should also offer some tasty snacks. Here are a few mouth-watering and summer-inspired recipes for your solstice celebration.

Mango Guacamole

Transform everyone’s favourite dip with the sweet and tropical taste of mango! This simple but irresistible mango guacamole is sure to be a hit.

Ingredients
•3 avocados
•1 peeled and diced mango
•1/4 cup diced red onions
•1/4 cup diced bell pepper
•1/4 cup finely chopped cilantro
•2 minced garlic cloves
•Juice from two limes
•Salt and pepper to taste
•Tortilla chips

Instructions

1. Mash the avocado in a mixing bowl and season with lime juice, salt, and pepper.

2. Add red onions, bell pepper, cilantro, and garlic. Stir to combine.

3. Add mango and stir lightly.

Baked Brie with Jam

Ingredients
•Large wheel of brie cheese

Instructions

1. Preheat the oven to 400 F.

2. Place the brie in a small, shallow baking dish. Alternatively, place it on a baking sheet covered in parchment paper.

3. Spread the jam on top of the brie. Drizzle with honey.

4. Bake for 15 minutes. Allow to cool, then serve with crackers!

Summer Snack Wraps

For something a little more filling, serve up these tortilla pinwheel wraps and pack them full of summer greens. They couldn’t be easier to customize with your preferred ingredients.

Ingredients
•Flour tortilla wraps, as many as you need
•Your favourite types of deli meat
•Cream cheese, plain or flavoured
•Spinach, arugula, or any of your favourite greens

Instructions

1. Lay out a tortilla and spread the cream cheese evenly over top.

2. Add a layer of meat, followed by a sprinkling of greens.

3. Roll the wrap up tightly into a log.

4. Slice the roll into pinwheels of your preferred thickness.

5. Make as many wraps as necessary.

6. Set the pinwheels on a platter and welcome everyone to try!

Summer Smoothie

If you like sweet and creamy smoothies with a berry base and a hint of citrus, then this one is for you! It’s like summer in a cup.

Ingredients
1 1/4 cup frozen raspberries
1 sliced and frozen banana
3/4 cup orange juice
1/2 cup pomegranate juice
3/4 cup almond milk

Instructions

1. Add all ingredients into a blender and blend until the mixture is smooth and creamy.
