4 Simple Spring Vegetable Recipes for Any Meal

Cauliflower, radishes, carrots, and green beans are some of the most popular offerings of the spring vegetable bounty. Whether you grew them yourself or picked them up in-store, it’s a great time to get them fresh. Even better, they can all be used to make a tasty side that’s sure to be a hit at the dinner table. In just half an hour or less, you can have each of these whipped up and ready to serve.

Mashed Cauliflower

Cauliflower is a very versatile vegetable that you can even substitute for mashed potatoes. Mashed cauliflower is light and flaky, and it has a fresh taste that you can’t pass up.

Ingredients
• Cauliflower florets from one head
• 1 tablespoon olive oil
• 1 smashed garlic clove
• 1 tablespoon cream cheese
• 1/4 cup grated parmesan
• 1/4 teaspoon salt
• Pinch of black pepper

Instructions

1. Steam the cauliflower for about 10 minutes, until tender.

2. Add olive oil to a small skillet and heat over medium. Cook garlic for about 2 minutes, until soft.

3. Put half the cauliflower into a food processor and blend on high. Add remaining florets individually until the mixture has a creamy texture. Blend in the remaining ingredients.

Sauteed Radishes

Radishes don’t only belong in salads–you can also bring out their unique flavour by sauteing them up on the stovetop!

Ingredients
• 20 trimmed radishes, cut in half
• 1/2 tablespoon butter
• 1/2 tablespoon olive oil
• Salt and pepper to taste

Instructions

1. In a skillet, heat butter and olive oil on a low setting. Add in the radishes cut side down and season.

2. Cook for about 10 minutes until the radishes are softened and browned.

Roasted Carrots

You can’t go wrong with roasted carrots. Some light seasoning and a few fresh herbs are all it takes to make them shine.

Ingredients
• 12 sliced carrots
• 3 tablespoons olive oil
• 1 tablespoon minced fresh dill
• 1 tablespoon minced fresh parsley
• 1 teaspoon salt

Instructions

1. Preheat the oven to 400 F

2. Toss carrots in a mixing bowl with olive oil, salt, and pepper.

3. Transfer carrots to a baking sheet and roast for about 20 minutes, until tender and browned.

4. Toss the carrots with minced parsley and dill.

Garlic Green Beans

It doesn’t get much easier than pan-frying up some green beans for a quick, healthy, and tasty side dish.

Ingredients
• 1 lb trimmed green beans
• 1 tablespoon olive oil
• 3 finely minced garlic cloves
• 1/2 teaspoon sea salt

Instructions

1. Heat a large pan on high. Add olive oil and green beans.

2. Cook for about 5 minutes, until the green beans are soft.

3. Add garlic and cook for one more minute.

4. Toss green beans with sea salt.

The flavours of spring are always a palette pleaser. When you need a quick side for family dinner or to bring to a spring potluck, any one of these four recipes is a great choice.
