Greg’s Spaghetti Bacon Carbonara
Carbonara (Italian: [karboˈnaːra]) is an Italian pasta dish from Rome made with eggs, hard cheese, cured pork and black pepper
Ingredients
- 1/2 lb Bacon
- 2 cloves of garlic (whole, smashed)
- 4T Butter
- 3 Eggs
- 1C grated parmesan Reggiano cheese (the real deal)
- Pepper
- Salt
Start by getting the water to a rolling boil for the spaghetti. Sauté the bacon, butter & garlic cloves
Boil the pasta until cooked.
Add the pasta into the pan of sautéed bacon. Add about 1/2c of the pasta water to the pan and mix pasta well.
Remove from heat and let cool for a few mins.
Whisk the eggs, cheese, salt & pepper and add the mixture to the pasta.
Work in the egg mixture well into the pasta.
