Onion soup is easy to make and packs some serious flavour. The trick is the caramelize the onions low and slow!
Ingredients
8-10 onions (I use cooking onions) 3 T Olive oil
2T Butter Salt & Pepper 1 T Sugar 2 Bay Leaves 2 Cloves Garlic
8 C Beef Stock 1/2 C White Wine or Red 1/2 t Dried Thyme
Heat the olive oil in a pot and add the onions, medium heat for 20 minutes.
Add the butter, salt & pepper, bay leaves, sugar and garlic. Sauté until the onions are nice and caramelized.
Add the remaining ingredients, bring to a boil, reduce heat and simmer for 30 minutes.
Toast some bread, or croutons, add some Swiss or Gruyere cheese and place individual bowls under the broiler.
