Four Recipes for Leftover Thanksgiving Turkey

Here are four recipes that each use leftover Thanksgiving turkey in a different way so that you don’t get tired of the main ingredient.

Turkey Pasta Casserole
Pasta casserole is a filling dish and an easy dinner to make for the whole family. It’s also a great way to use up a substantial amount of leftover turkey.

Ingredients
– 4 cups spiral pasta
– 3 cups shredded turkey
– 2 cups mixed vegetables
– 2 cups milk
– 1 cup shredded cheese
– 3 tablespoons butter
– 3 tablespoons flour
– 1 teaspoon salt
– Pinch of dried thyme

Directions
1. Preheat oven to 350 F and cook pasta until it is soft.
2. In a large saucepan, melt butter over medium heat. Add flour and mix with a whisk, then gradually add milk. Stir constantly and bring the mixture to boiling.
3. Add pasta, turkey, vegetables, and seasonings and stir. Transfer the mixture into a baking dish and top with cheese.
4. Bake for 25 to 30 minutes, or until the casserole is bubbling and golden brown.

Turkey Potato Hash
If you’re craving a satisfying breakfast dish and have some leftover turkey sitting in the fridge, then whip up a batch of delicious turkey potato hash.

Ingredients
– 3 cups shredded turkey
– 6 cups diced potatoes, cooked
– 3 tablespoons butter
– 1 diced medium onion
– 2 diced peppers, red or green
– 1 teaspoon minced garlic
– 1 cup diced tomatoes
– Salt and pepper to taste

Directions
1. In a large skillet, melt butter and saute the onions and peppers.
2. Add turkey, potatoes, garlic, tomatoes, and salt and pepper. Stir.
3. Cook over low heat for about 15 to 20 minutes, until thoroughly heated through and lightly browned.

Thanksgiving Turkey Panini
A twist on the traditional leftover turkey sandwich, this panini can also help you get through your leftover gravy and cranberry sauce.

Ingredients
– 2 slices of any sandwich bread
– A few slices of your favourite cheese
– Leftover Thanksgiving turkey
– Leftover turkey stuffing
– Leftover cranberry sauce
– Leftover gravy
– Butter

Directions
1. Heat a griddle, panini press, or skillet to medium-high heat.
2. Layer all of the ingredients between the two pieces of bread, and spread butter on the outside of each piece.
3. Place the sandwich in your panini press and press lightly until the outside is golden brown and the cheese is melted. For a skillet or griddle, simply flip the sandwich once one side is done.

Homestyle Turkey Soup
A popular leftover Thanksgiving turkey dish, soup is a great way to use up the turkey carcass. Plus, there’s nothing better than a warm bowl of soup on a chilly fall day.

Ingredients
– 1 leftover turkey carcass
– Leftover turkey meat
– Dry pasta of your choice
– 1 cup carrots, chopped
– 1/3 cup celery, chopped
– 1 diced onion
– 2 bay leaves
– 1 teaspoon dried basil
– 1 teaspoon dried parsley
– Pinch of dried thyme
– Salt and pepper

Directions
1. Combine turkey carcass, bay leaves, parsley, basil, and thyme into a large pot and fill with enough water to cover the carcass. Bring to a boil, then simmer for about one hour.
2. Strain the broth into a soup pot and add turkey meat, vegetables, and salt and pepper to taste. Simmer for about 10 minutes until vegetables are tender.
3. Add pasta and cook until the pasta is soft. Remove from heat and serve!
