Fixed Operations Manager Mitch Clark has been with the West Coast Auto Group for almost 2 years. During his time with us, he has made numerous changes to his departments resulting in better services for our customers as well as our staff. His energy never seems to wain even though he oversees 2 dealerships as well as our Detail and Accessory Centre in Pitt Meadows. A former resident of the Okanagan Mitch has settled and found himself a new home in the Langley area and enjoys a short commute.

Three Recipes for Thanksgiving Leftovers

There are always plenty of leftovers remaining after Thanksgiving dinner. Instead of simply reheating your leftovers for the next few days, why not make some new, delicious dishes out of them instead? 

Three of the most common Thanksgiving leftovers are turkey, mashed potatoes, and cranberry sauce. Thankfully, these are also among the easiest leftovers to use in a new dish. Below you’ll find three recipes for a savoury leftover turkey soup, hearty leftover mashed potato pancakes, and sweet leftover cranberry sauce muffins. 

Savoury Turkey Soup 

What better way to use every bit of your leftover Thanksgiving turkey than to make soup out of it? Turkey soup is quick and simple to make and will feed your family for the next several days. 

Ingredients

  • Leftover turkey carcass
  • Diced leftover turkey meat
  • Small dry pasta
  • Chicken stock
  • Frozen mixed vegetables
  • Dried thyme
  • Garlic
  • Bay leaves
  • Salt & pepper
  • Dill 

Directions 

  1. To make the broth, combine the turkey carcass, chicken stock, bay leaves, garlic, and thyme into a large soup pot. Fill with enough water to cover the turkey carcass by about an inch. Bring water to a boil, then reduce heat, cover, and simmer for one hour. Strain the broth and discard solids.
  1. Add diced leftover turkey meat and frozen mixed vegetables. Season with salt and pepper and simmer until vegetables are tender, for about 10 minutes. Add in small dry pasta and cook until the pasta is tender. Stir in some dill and serve!

Hearty Mashed Potato Pancakes 

If you always seem to end up with too much leftover mashed potato, don’t worry. In just a few minutes you’ll be able to transform all of your mashed potatoes into a tasty and filling breakfast dish. 

Ingredients

  • 1 cup mashed potatoes
  • 1 egg
  • ⅓ cup flour
  • ¼ cup milk
  • Olive oil
  • Salt & pepper 

Directions 

  1. Combine mashed potatoes, flour, egg, and milk in a bowl and mix until smooth. Season with some salt and pepper.
  1. Heat two tablespoons of olive oil in a non-stick skillet over medium heat. Once the skillet is warm, add about a ⅓ cup of pancake batter and cook for about two minutes on both sides, until golden brown.
  1. Enjoy mashed potato pancakes on their own, or serve with sour cream or leftover gravy.

Sweet Cranberry Sauce Muffins 

Itching for something a little sweeter after such a savoury Thanksgiving dinner? These delicious cranberry sauce muffins will be sure to satisfy your sweet tooth.

Ingredients

  • 1 ½ cup cranberry sauce
  • 2 cups flour
  • 1 cup sugar
  • 1 cup milk
  • 3 teaspoons baking powder
  • ½ teaspoon salt
  • ¼ cup vegetable oil
  • 1 teaspoon vanilla
  • 1 egg

Directions 

  1. Preheat oven to 400°F and prepare a muffin tin by either lining the muffin cups with baking paper or spraying with a baking spray.
  1. In a large mixing bowl, combine flour, sugar, baking powder, and salt. Mix well, then create a well in the centre and add milk, egg, vanilla, and vegetable oil. Mix all wet and dry ingredients together and stir in the cranberry sauce.
  1. Divide batter into individual muffin cups, filling each cup about three-quarters full.
  1. Bake for about 20 minutes or until the muffins are golden brown. Let cool for a few minutes and enjoy!
