Mediterranean Salmon Salad
A Light and Healthy Summer Meal

Mediterranean salmon salad is a healthy salad with a light dressing that will help you stick to your summer eating goals. Salmon Ingredients
• 500g salmon fillets
• Salt and pepper, as needed
• Olive oil, as needed
• Lemon juice, as needed

Salad Ingredients
• 1 head romaine lettuce, chopped
• 1 cup tomatoes, chopped
• 1 cup diced cucumber
• 1/2 cup sliced red onion
• 1 sliced avocado
• 1/2 cup diced red bell pepper
• 1/2 cup crumbled feta cheese
• 1/3 cup pitted olives (optional)

Dressing Ingredients
• 1/4 cup lemon juice
• 1/2 cup olive oil
• 1 teaspoon honey
• 1 tablespoon dijon mustard
• Sea salt and pepper, to taste

Instructions

1. For salmon: Preheat oven to 400F and prepare salmon by rubbing with olive oil and seasoning with salt and pepper. Place skin-side down on a large rimmed baking sheet lined with foil and drizzle lemon juice on top. Bake until cooked through for about 10-15 minutes, depending on the size of your fillet.

2. For salad: In a large bowl, combine lettuce, tomato, cucumber, red onion, avocado, red bell pepper, olives (if desired), and feta cheese and mix well. Set aside.

3: For dressing: Add lemon juice, olive oil, honey, mustard, salt, and pepper into a blender and blend until smooth, which should take about 30 seconds. Taste and add salt and pepper as desired.

4. Place baked salmon on top of your salad, drizzle salad with dressing, and enjoy!
