3 Pumpkin Recipes to Try This Season
The perfect fall ingredient

Pumpkin represents the quintessential flavours of fall. It has a sweet and earthy taste that works well in a variety of sweet and savoury dishes. Here are three recipes that feature everyone’s favourite orange squash as the star ingredient.

1. Pumpkin Muffins

When you have a hankering for something sweet, pumpkin muffins will quell the craving. They come out soft, fluffy, and in a beautiful orange colour.

Ingredients
1 1/2 cup all-purpose flour
1 1/4 cup sugar
1/2 cup vegetable oil
1 cup pumpkin puree
2 eggs
1 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
1 teaspoon ground cinnamon
1/2 teaspoon vanilla extract.
1/4 cup water

Instructions

1. Preheat oven to 375 F and prepare a standard muffin pan with paper liners.

2. In a mixing bowl, whisk together flour, sugar, baking soda, salt, cinnamon, and nutmeg.

3. In a separate bowl, whisk together pumpkin puree, eggs, oil, water, and vanilla extract.

4. Pour the second bowl into the first and stir ingredients to incorporate, taking care not to overmix.

5. Divide batter evenly into the muffin pan wells and bake for 20-25 minutes. Let cool and set out to eat!

2. Pumpkin Soup

Extra creamy, gently spiced, and full of nutrients, pumpkin soup is sure to hit the spot on chilly evenings. If you can stop yourself from eating it all up at once, the leftovers taste just as good the next day.

Ingredients
2 sugar pumpkins
1/4 yellow onion, chopped
1 tablespoon olive oil
2 garlic cloves, minced
2 cups vegetable broth
1 cup heavy cream
1 tablespoon honey
1/4 teaspoon salt, black pepper, nutmeg, and cinnamon

Instructions

1. Preheat oven to 425 F and prepare a baking sheet lined with parchment paper.

2. Half each pumpkin, scoop out the seeds, and brush flesh with olive oil. Place cut side down on the baking sheet and roast for about 35 minutes. Peel away skin and discard.

3. Add remaining olive oil to a large saucepan and cook garlic and onion on medium heat until lightly browned.

4. Add remaining ingredients and bring the mixture to a boil, simmering for about 15 minutes.

5. Remove from heat, let cool slightly, and transfer to a blender.

6. Pour pureed soup into a bowl for serving.

3. Pumpkin Alfredo

For a filling meal with well-balanced pumpkin flavour, whip up a super easy but highly impressive pumpkin alfredo. This savoury dish will shine on the holiday table and is great for a quick weeknight dinner as well.

Ingredients
12 ounces fettuccine pasta
2 tablespoons butter
1 cup heavy cream
1 cup pumpkin puree
1/2 cup parmesan cheese
6 garlic cloves, minced
5 sage leaves, chopped
Salt and pepper to taste

Instructions

1. Cook pasta according to instructions on the package.

2. Melt butter over medium-high heat in a large skillet. Add garlic and sage, sauteing for about 5 minutes until garlic is golden brown.

3. Add pumpkin puree, cream, parmesan cheese, and stir until combined.

4. Flavour with salt and pepper and simmer sauce for around 10 minutes.

5. Remove from heat and toss pasta in the sauce. Top with more parmesan cheese if desired.
