3 Easy Christmas Leftover Recipes

Christmas dinner leftovers are great for a Boxing Day brunch and often even a few more meals after that. Your leftover turkey, vegetables, and potatoes can all be used again in some delicious ways. Here are three recipes for Christmas leftovers to try this year.

Refried Roast Potatoes

The best way to enjoy your leftover roast potatoes is to fry them up the next morning for a quick, easy, and filling meal. Just a few simple ingredients will transform them into a new dish.

Ingredients
• 500 grams roast potatoes
• 1/2 red onion, chopped
• 1/2 teaspoon cayenne
• 1/2 teaspoon turmeric
• 3 tablespoons vegetable oil
• Thyme leaves

Instructions
1. Heat one tablespoon of oil over medium heat in large frying pan. Add onions and cook until browned.
2. Add cayenne, turmeric, and a few thyme leaves, then add roast potatoes with one tablespoon of oil and toss. Use the back of a spoon to squash each potato and cook for about 10 minutes.
3. Add the remaining oil, toss potatoes, and fry for a few more minutes for extra crispiness.

Vegetable Tart

Make sure all of the leftover vegetables from Christmas dinner get eaten up by throwing them together in a delectable tart. This recipe is great for leftover vegetables from any occasion.

Ingredients
• 350 grams leftover cooked vegetables
• 500 grams shortcut pastry
• 100 grams cheddar cheese, grated
• 150 ml whole milk
• 225 ml coffee cream
• 3 eggs
• Thyme leaves

Instructions
1. Preheat oven to 350 F and roll out pastry dough to a thickness of 3 millimetres. Line a pie dish with the pastry and chill in freezer for 10 minutes.
2. Line pastry with parchment paper and fill with pie weights. Bake for 25 minutes, remove weights and parchment paper, then bake for 10 more minutes until golden brown. Let cool and trim the overhanging pastry.
3. Fill tart with leftover vegetables and cheese. Whisk together milk, cream, eggs, and thyme leaves until mixture is smooth. Pour over vegetables and cheese.
4. Bake tart for 30-35 minutes, until just set in the middle. Remove from pie dish and let cool before serving.

Turkey Ramen

If you are looking for something a little different to do with your leftover turkey, then ramen is a fantastic and flavourful option. The warmth of the broth is perfect for a winter’s day.

Ingredients
• 250 grams ramen noodles
• 250 grams leftover turkey
• 12 cups turkey or chicken stock
• 15 grams dried shiitake mushrooms
• 2 bunches scallions, chopped
• 1, 2 cm piece ginger, sliced
• 1 garlic clove, crushed
• 1/2 cup bonito flakes
• 25 grams bean sprouts
• 2 tablespoons soy sauce
• 2 eggs

Instructions
1. Combine stock, soy sauce, scallions, garlic, ginger, mushrooms, and bonito flakes into large pot and bring to a boil. Reduce heat and simmer for about an hour.
2. Bring small pot of water to a boil and cook eggs for about seven minutes. Transfer eggs into a bowl of cold water to cool, then peel and set aside.
3. Cook ramen noodles according to the direction on the package.
4. Strain the stock and discard solids.
5. Divide noodles into deep bowls and top with sliced turkey and halved eggs.
6. Ladle broth into bowls, top with bean sprouts, and serve!
